Join the brilliant Karen Wright (GBBO Star, series 9) live from Wakefield, UK as she guides you through her recipe for delicate Tarte Piemontaise. This dessert originates from the Piedmont area in North Italy where hazelnuts grow in abundance. A sweet hazelnut pastry filled with hazelnut and chocolate frangipane, dusted with icing sugar before being crowned with peaks of rich ganache and a caramel dipped Hazelnut.
Equipment

Rolling pin,

6 x 10cm loose bottom tartlet tins or 1 x 20cm loose bottom flan tin,
Cupcake cases or parchment paper,
Baking beans,
Cooling rack.
Medium saucepan,
Wooden spoon or silicone spatula,
Large shallow dish (for cooling ganache) piping bag,
1cm star shaped nozzle, spoon.
Mixing bowl,
Electric hand mixer,

Small saucepan with glass lid,
Pastry brush,
Cocktail sticks,
Parchment paper,
Heavy chopping board,
Small dish or ramekin,
Small paintbrush.

Ingredients
Pastry:
160g Plain Flour,
40g ground hazelnuts,
115g cold, cubed butter,
50g sifted icing sugar,
pinch salt,
1 beaten egg.
Ganache:
200g Double (heavy) cream,
200g dark chocolate, chopped up (about 55% cocoa solids)
Hazelnut and Chocolate Frangipane:
100g softened butter,
100g caster sugar,
2 beaten eggs,
100g ground hazelnuts,
50g chocolate chips,
1 Tbs plain flour,
pinch of salt,
1 tsp vanilla extract.
Caramel Nuts:
100g caster sugar,
juice half a lemon,
about 12 whole blanched hazelnuts. (Extra for mistakes we just need 6)
Decoration:
1 Tbs icing sugar,
gold Lustre dust (optional)
Edible gold leaf (optional)
We’ll start off the class with an introductory welcome and some background from Karen's time on TV, before we ask you to put on your aprons and bake along as you watch Karen demonstrate all the skills required to make these delicious treats.
Our class will take around 2 hours as we bake our little masterpieces, before you can tuck into the fruits of your labour all whilst hearing fantastic memories and stories from Karen. Tickets are priced at £35 for individuals and £50 for groups of two or more that will join from the same household.Places are non-refundable and cannot be cancelled or altered after purchase.
All classes are subject to a minimum number of six attendees signing up. If the minimum number is not met, we will inform those who have purchased a place no later than 48 hours before the class, and will arrange a full refund.
Upon booking, all guests will be emailed a link to the class with a full breakdown of ingredients and equipment as well as the method one week before their class. Please do check junk email just in case you don't spot it arrive!
